Tzatziki

Wring the grated cucumber until it almost stops dripping or the sauce thins in the fridge. Full-fat sour cream can stand in for the yogurt.
Ingredients
- 1 cup full-fat Greek yogurt (or full-fat sour cream)
- ½ English cucumber, grated
- 2 garlic cloves, grated
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice
- ¼ cup fresh dill, chopped
- ½ teaspoon kosher salt
- Black pepper
Instructions
Salt the grated cucumber and wring it in a towel until it almost stops dripping.
Stir the grated garlic into the lemon juice and let it sit 5 minutes.
Fold into the yogurt with the olive oil, dill, salt, and pepper. Refrigerate.
Notes
Sour cream substitutes 1:1 for the yogurt. It is richer and less sharp, so the lemon and garlic do more work. Don’t spoon it over hot meat or it thins. Serve with pita, grilled lamb, or vegetables.
