Baked Beans

Ingredients

  • 5 cans Campbell’s Pork and Beans (drain 3, keep liquid in 2)
  • 6-8 slices bacon, chopped
  • 1 medium yellow or white onion, diced
  • ¾ cup ketchup
  • ½ cup brown sugar, packed
  • ¼ cup molasses
  • 3 tablespoons sweet pickle relish
  • 2 tablespoons yellow or Dijon mustard

Instructions

  1. In a large skillet over medium heat, fry the chopped bacon until it just starts to crisp. Add the diced onions to the pan and sauté them in the bacon fat until they are soft and translucent (about 5–7 minutes). Do not drain the grease.

  2. In a very large mixing bowl or directly in your baking dish, combine the ketchup, brown sugar, molasses, relish, and mustard. Whisk them together until completely smooth.

  3. Add the 5 cans of beans (remembering to drain 3 of them) to the sauce mixture. Scrape the bacon, onions, and all the pan drippings right into the bowl. Fold everything together gently with a spatula.

  4. Pour the mixture into a large 9x13 baking dish or a deep cast-iron skillet.

  5. Bake uncovered at 350°F (175°C) for 1.5 to 2 hours. Let it rest for 15 minutes before serving so the sauce can set up.
